TGIF with Bombay Sapphire

It’s Friday so I know what’s on your mind. And yes, it is time for a drink. Well, it’s after midday so it’s basically the weekend, right?

My advice – ditch the standard fare and get a little bit fancy this week with a cocktail from Bombay Sapphire’s new Spring/Summer 14 Collection. It’ s win-win really; any one of these is a sure fire way to put you in the good books with whoever it is you want to impress (be it your colleagues, friends, or maybe your lover), and let’s be honest a cocktail is a bit more exciting than what you originally had in mind. Forget beer o’clock. This season it’s all about gin o’clock.

Inspired by a classic Kiwi holiday, renowned mixologist Dickie Cullimore has created a collection of seven summer cocktails to satisfy your thirsty summer selves. Using fresh, in-season produce (like berries, elderflower, and citrus fruits), the Bombay Sapphire Ambassador has given your old faithfuls a fresh spin while also stirring up some soon-to-be favourites for good measure. Just imagine the sun is shining, you’re at the bach, and it’s nothing but sea and sand and your best mates. Sounds like the perfect getaway to me!

I’ve picked out my favourite recipes from the collection for a bit of Friday inspiration. Go on, put a little spring in your step. Enjoy…

Sangria Flora

The taste of summer.


  • 30ml Bombay Sapphire
  • 20ml Martini Bianco
  • 20ml St-Germain elderflower liqueur
  • 20ml Apple juice
  • Splash of soda


  • Apple slice


  • Large wine glass


  • 1⁄2 FILL wine glass with ice.
  • ADD Bombay Sapphire, Martini Bianco, St-Germain elderflower liqueur and apple juice.
  • STIR.
  • ADD splash of soda.
  • GARNISH with 2 apple slices.


Fancy Gin & Tonic

The classic G & T with a sweet twist.


  • 45ml Bombay Sapphire
  • 90ml East Imperial
  • Superior Tonic
  • 10ml St-Germain elderflower liqueur


  • Slice of Granny Smith apple


  • Large goblet or wine glass


  • ADD ice sphere to goblet.
  • ADD Bombay Sapphire, St- Germain elderflower liqueur, and East Imperial Superior Tonic to goblet.
  • Gently STIR.
  • GARNISH with slice of Granny Smith apple.

Fancy G&T_LowRes

Pimm’s & Blue

A reinterpretation of a Pimm’s Cup with a vibrant taste of summer.


  • 30ml Bombay Sapphire
  • 30ml Pimm’s No 1 Cup
  • 1 Strawberry (sliced)
  • 3 Boysenberries
  • 6 Mint leaves
  • 1 Orange wedge
  • 2 Lemon wedges


  • Mint sprig


  •  Tall cocktail


  • 1⁄2 FILL tall cocktail glass with ice.
  • ADD Pimm’s.
  • ADD fruit.
  • FILL glass with ice.
  • TOP with ginger ale and lemonade.
  • STIR gently. SERVE with straws. PLACE mint sprig.

  • 30ml Bombay Sapphire
  • 20ml Martini Rosso
  • Vermouth 20ml Campari


  • Orange and lemon zest


  • Old-fashioned glass


  • ADD Bombay Sapphire, Martini Rosso and Campari to old-fashioned glass.
  • FILL glass with large blocks of ice.
  • Gently STIR, so as not to chip the ice.
  • SQUEEZE orange and lemon zest over cocktail to finish.
